Description

This cheesy broccoli chicken casserole is a comforting dish packed with flavor.

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup white rice, cooked
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 2 cups cheddar cheese, shredded
  • 1/2 cup breadcrumbs or crushed crackers
  • 1/4 cup melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/4 cup crispy fried onions

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Mix the Sauce: In a large mixing bowl, combine the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  3. Combine Ingredients: Add shredded chicken, steamed broccoli, cooked rice, and half of the shredded cheddar cheese to the sauce. Mix until well combined.
  4. Assemble Casserole: Spread the mixture evenly in a greased 9×13-inch baking dish.
  5. Top with Cheese: Sprinkle the remaining cheddar cheese on top of the casserole.
  6. Prepare Topping: In a small bowl, mix the breadcrumbs or crushed crackers with melted butter until thoroughly coated.
  7. Add Toppings: Evenly distribute the breadcrumb mixture over the top of the casserole. Optionally, sprinkle crispy fried onions on top for extra crunch.
  8. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

Notes

  • Make it Spicy: Add red pepper flakes or a dash of hot sauce for extra heat.
  • For a Creamier Casserole: Use half-and-half instead of milk.
  • Vegetable Variations: Feel free to add more veggies like bell peppers or mushrooms.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
