Description

A refreshing salad featuring julienned carrots, cucumber, bell pepper, and a tangy dressing.


Ingredients

  • 2 large carrots, peeled and julienned
  • 1 large cucumber, thinly sliced
  • ½ red bell pepper, thinly sliced
  • ¼ red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the julienned carrots, cucumber, red bell pepper, and red onion. Toss gently to mix.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad mixture and toss gently to coat.
  4. Garnish with fresh cilantro before serving. For enhanced flavor, refrigerate for 30 minutes prior to serving.
