- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the julienned carrots, cucumber, red bell pepper, and red onion. Toss gently to mix.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Drizzle the dressing over the salad mixture and toss gently to coat.
- Garnish with fresh cilantro before serving. For enhanced flavor, refrigerate for 30 minutes prior to serving.
