Scale
  • 3 ripe bananas
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • Whipped cream, for serving

Instructions

  1. Caramelize the Bananas:
    • Slice the bananas into thick rounds.
    • In a large skillet, melt the unsalted butter over medium heat.
    • Add 1 cup of granulated sugar and cook until it turns a caramel color.
    • Place the banana slices in the caramel and cook for 2 minutes on each side.
    • Remove from heat and set aside.
  2. Prepare the Pudding:
    • In a medium saucepan, combine milk, heavy cream, 1/2 cup sugar, cornstarch, and salt. Whisk together until smooth.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
    • Remove from heat and stir in vanilla extract.
  3. Assemble the Dessert:
    • In a serving dish, layer half of the caramelized bananas.
    • Pour half of the pudding over the bananas.
    • Add another layer of the remaining bananas.
    • Top with the remaining pudding.
  4. Finishing Touches:
    • In a small bowl, mix the brown sugar and cinnamon.
    • Sprinkle this mixture over the top layer of the dessert.
  5. Chill:
    • Refrigerate the dessert for at least 2 hours before serving to allow the flavors to meld.
  6. Serve:
    • Serve with a dollop of whipped cream on top.

Notes

  • Use ripe bananas for the best flavor and caramelization.
  • Stir the pudding mixture constantly to prevent lumps.
  • For an extra crunch, add some toasted nuts on top before serving.
  • If desired, substitute almond or coconut milk for a dairy-free option.
