A delicious and creamy blueberry tart with a buttery graham cracker crust.

- 2 cups fresh blueberries
- 8 oz cream cheese (softened)
- 1½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter (melted)
- ½ cup heavy cream
- ¼ cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract

Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- Mix the graham cracker crumbs, ¼ cup of granulated sugar, and melted butter in a bowl.
- Press the mixture into the bottom of a tart pan evenly.
- Bake for 10 minutes, then let it cool completely.
- Make the Cream Cheese Filling:
- In a separate bowl, beat the softened cream cheese until smooth.
- Add powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Mix until well combined and creamy.
- Spread the cream cheese mixture over the cooled graham cracker crust.
- Prepare the Blueberry Topping:
- In a saucepan, combine 1 cup of blueberries, ¼ cup of granulated sugar, lemon juice, and cornstarch.
- Cook over medium heat until the mixture thickens and becomes bubbly.
- Remove from heat and gently fold in the remaining 1 cup of fresh blueberries.
- Allow the mixture to cool slightly before spreading it over the cream cheese layer.
- Assemble and Serve:
- Spread the blueberry mixture evenly over the cream cheese layer.
- Refrigerate the tart for at least 2 hours to set.
- Once set, you can garnish with additional fresh blueberries, if desired, before serving.

- For an extra flavor boost, consider adding lemon zest to the cream cheese filling.
