Description

A delicious and creamy blueberry tart with a buttery graham cracker crust.

Ingredients

Scale
  • 2 cups fresh blueberries
  • 8 oz cream cheese (softened)
  • 1½ cups graham cracker crumbs
  • ½ cup granulated sugar
  • ½ cup unsalted butter (melted)
  • ½ cup heavy cream
  • ¼ cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • a pinch salt

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • Mix the graham cracker crumbs, ¼ cup of granulated sugar, and melted butter in a bowl.
    • Press the mixture into the bottom of a tart pan evenly.
    • Bake for 10 minutes, then let it cool completely.
  2. Make the Cream Cheese Filling:
    • In a separate bowl, beat the softened cream cheese until smooth.
    • Add powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Mix until well combined and creamy.
    • Spread the cream cheese mixture over the cooled graham cracker crust.
  3. Prepare the Blueberry Topping:
    • In a saucepan, combine 1 cup of blueberries, ¼ cup of granulated sugar, lemon juice, and cornstarch.
    • Cook over medium heat until the mixture thickens and becomes bubbly.
    • Remove from heat and gently fold in the remaining 1 cup of fresh blueberries.
    • Allow the mixture to cool slightly before spreading it over the cream cheese layer.
  4. Assemble and Serve:
    • Spread the blueberry mixture evenly over the cream cheese layer.
    • Refrigerate the tart for at least 2 hours to set.
    • Once set, you can garnish with additional fresh blueberries, if desired, before serving.

Notes

  • For an extra flavor boost, consider adding lemon zest to the cream cheese filling.
  • Use high-quality vanilla extract for the best flavor.
  • Make sure the cream cheese is completely softened to prevent lumps in the filling.
  • For a firmer crust, refrigerate the crust after baking and before adding the cream cheese layer.
