Description

A refreshing salad with arugula, blackberries, avocado, and a light vinaigrette.


Ingredients

  • 1 cup fresh blackberries
  • 1 ripe avocado
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons chopped walnuts

Instructions

  1. Rinse baby arugula and blackberries, then gently pat them dry.
  2. Slice the avocado into thin wedges and set aside.
  3. In a large bowl combine arugula, blackberries, red onion, avocado slices, and walnuts.
  4. In a small bowl whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  5. Drizzle the dressing over the salad ingredients.
  6. Gently toss to coat all components evenly.
  7. Divide the salad among plates and serve immediately.
