Instructions

  1. Prepare the Pan: Preheat your oven to 350°F (175°C). Generously grease a 12-cup bundt pan with butter or nonstick spray, making sure to get into every groove. Dust with flour to prevent sticking.
  2. Mash and Mix: In a large bowl, mash the ripe bananas until smooth. This step is key—the riper the bananas, the more intense and caramel-like the flavor. In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, then stir in the sour cream and vanilla extract.
  3. Combine Dry and Wet: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Slowly add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix. If using, fold in chopped walnuts or chocolate chips for added texture.
  4. Bake It: Pour the batter into your prepared bundt pan and smooth the top. Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean. The cake should be golden and slightly springy to the touch.
  5. Cool and Glaze: Allow the cake to cool in the pan for 15 minutes before inverting onto a wire rack. Once completely cool, you can drizzle with a simple vanilla glaze or cream cheese frosting, or serve as is for a more rustic touch.
