- 2 cups cream cheese, room temperature
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1/2 teaspoon cinnamon
- 1/2 cup finely ground pistachios
- 1/2 cup unsalted butter, melted
- 12 sheets phyllo dough, thawed
- 1 cup chopped pistachios
- 1/2 teaspoon cinnamon
- 2 tablespoons granulated sugar
- 1/4 cup melted butter
- 1/2 cup honey
- 1/4 cup water
- 1/2 teaspoon lemon juice
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat your oven to 325°F (160°C). Lightly grease a springform pan. Layer 6 sheets of phyllo dough one by one in the pan, brushing each with melted butter as you go. Allow the edges to drape over the sides. This forms your flaky base.
- In a bowl, mix chopped pistachios, cinnamon, sugar, and melted butter. Sprinkle half the mixture over the phyllo base for that classic baklava crunch.
- Using a hand mixer, blend cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla, sour cream, cinnamon, and ground pistachios. Pour this creamy filling over your nut-studded crust.
- Layer the remaining 6 sheets of phyllo on top, again brushing with melted butter between each sheet. Tuck in or trim the overhanging edges for a neat finish.
- Bake for 60–70 minutes until the center is set and the top is lightly golden. Let it cool at room temperature, then refrigerate for at least 4 hours (or overnight) to set.
- While the cheesecake chills, make your syrup. Simmer honey, water, lemon juice, and cinnamon together for 5 minutes. Once the cake is cooled and set, pour the syrup over the top, letting it seep into the crispy layers.
- Before serving, sprinkle additional chopped pistachios on top for texture and a beautiful presentation.
